This is really good...Ham Pie
1-9" deep dish pie crust, unbaked
1 pound part skim ricotta
2 eggs
1/2 tsp. garlic powder, not garlic salt
1/4 cup Parmigiano cheese, grated
1 cup ham, diced (do not use smoked or honey ham for this)
2 tbsp. fresh parsley
1/4 tsp ground pepper
1/2 cup part skim mozzarella cheese, grated
Mix all ingredients together. Taste for salt and adjust.
Pour into pie shell. Bake at 350 for
approximately 35 minutes. Check for doneness using knife
inserted in center. If it comes out clean, it is done. If not done,
continue to bake until set. Remove from oven and allow to cool.
Ham and Cranberry Brunch Bake
2 cups egg bread (challah) or other good quality bread, crusts removed and cubed
1 cup diced cooked ham
1/2 cup dried cranberries
3 green onions, sliced
8 eggs, beaten
1 cup buttermilk baking mix (Bisquick)
1 tablespoon or to taste--Dijonnaise
2 cups milk
salt and pepper to taste
1 cup grated Muenster cheese
Preheat oven to 350 degrees. Butter a 2 quart casserole. In the casserole, combine the bread cubes, ham, cranberries and green onions. Spread out to cover bottom of casserole. In a medium bowl, whisk together the eggs, Bisquick, Dijonnaise, milk and salt and pepper. Pour over the bread/ham mixture. Sprinkle with grated cheese and bake 45-50 minutes or until set and lightly browned. Serve warm. Add a fruit salad and some sweet rolls to complete your brunch, if desired. Don't forget the Mimosas for a special, grown-up morning meal. Enjoy.

Grilled Ham SaladPrep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutesIngredients:
•10 oz. pkg. salad greens
•1/2 lb. fully cooked ham steak slice
•1/4 cup peach preserves
•1/2 cup honey mustard salad dressing
•1-1/2 cups cubed Swiss or Havarti cheese
Preparation:
Prepare and heat grill. Place salad greens in serving bowl. Brush ham steak with preserves and place on grill. Cook 4-6" from medium heat for 8-13 minutes until hot, turning once and brushing frequently with preserves. Remove ham from grill and cut into 1" cubes. Toss with salad dressing and cheese in bowl with salad greens. Serves 4
Crunchy Ham Salad
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutesIngredients:
•2 cups radiatore pasta
•2 cups cooked cubed ham
•1/2 cup diced red onion
•1 cup sliced celery
•8 oz. can pineapple tidbits, drained
•1/2 cup tarragon vinegar
•1/3 cup oil
•2 Tbsp. honey
•1/2 tsp. celery seed
•1/2 tsp. salt
•1/2 tsp. dry mustard
•1/8 tsp. pepper
Preparation:
Cook pasta according to package directions and drain well. Meanwhile, combine ham, red onion, celery and drained pineapple in large bowl. In small bowl, combine vinegar, oil, honey, celery seed, salt, dry mustard, and pepper and blend with whisk. Pour over ham mixture. Add cooked and drained pasta and toss well to coat. Chill 2-3 hours before serving. 4-6 servings

Best Glazed Ham1 (10 lb.) cured ham, bone-in
Glaze:
3/4 cup brown sugar
2 tsp. spicy brown honey mustard
1 (4 oz.) can crushed pineapple with juice
2-3 dashes Tabasco
1 tsp. soy sauce
1½ tsp. fresh sliced ginger
hand full of cloves
Soak ham in water for 2-3 hours changing water every 45 minutes. Pat dry. Place ham cut side down in large roasting pan. Score ham in X’s w/ sharp knife, and place whole cloves in scored corners. Place all glaze ingredients into blender or food processor. Blend until smooth. Gently and slowly pour glaze over ham, making sure it is totally glazed. Bake 2-2½ hours at 300ºF.. Tent with foil if browning too quickly during last hour.

Baked Virginia Ham
1 (14 - to 16 pound) fully cooked, spiral-cut smoked ham
6 garlic cloves
8 1/2 ounces mango chutney
1/2 cup Dijon mustard
1 cup light brown sugar, packed
Zest of 1 orange
1/4 cup freshly squeezed orange juice
Preheat the oven to 350ºF. Place the ham in a heavy roasting pan.
Mince the garlic in a food processor fitted with the steel blade. Add the chutney, mustard, brown sugar, orange zest, and orange juice and process until smooth. Pour the glaze over the ham and bake for 1 hour, until the ham is fully heated and the glaze is well browned. Serve hot or at room temperature.
Serves 50 for cocktails, 35 for dinner.

Pineapple and Rosemary Glazed Ham
1 (8-10 lb.) cooked bone-in ham, rump half or 1( 4-6 lb.) cooked boneless ham
1¼4 cup packed dark brown sugar, divided
3 Tbsp. Dijon-style mustard
2 Tbsp. snipped fresh rosemary or 2 tsp dry rosemary, crushed
½ cup pineapple juice
¼ cup Dijon-style mustard
1 med(4 lb.) pineapple, peeled, cored, and coarsely chopped (4½ cups) or 3 (20-oz) cans pineapple tidbits, drained (reserve ½ cup juice)
1 recipe Grilled Pineapple Slices (see recipe below) (optional)
1. Preheat oven to 325ºF. Place ham in a shallow roasting pan. Score ham by making diagonal cuts, 1/4-inch deep, in a diamond pattern. Insert an oven-going meat thermometer into center of ham; the thermometer should not touch the bone, if present. Roast for 1-3/4 hours if using bone-in ham or 1 hour if using boneless ham.
2. Meanwhile, in a bowl combine 3 tablespoons of the brown sugar, the 3 tablespoons mustard, and rosemary. Brush mixture over ham. Roast for 15 minutes more. Meanwhile, for glaze, in a 2-quart saucepan combine the remaining brown sugar, the pineapple juice, and 1/4 cup mustard. Bring to boiling over medium heat, stirring frequently. Remove 1/2 cup glaze to brush over ham. Set aside.
3. Bake ham 30 minutes more or until thermometer registers 140 degree F, generously brushing with the 1/2 cup glaze several times during baking.
4. Meanwhile, add pineapple to remaining glaze in saucepan.

Pour the glaze over the ham and bake for 1 hour, until the ham is fully heated and the glaze is well browned. Serve hot or at room temperature.
