for Guacamole, less can be more. keep texture in mind too. it's forgiving, so blend for appearance and to suite your own taste.Try blending only PART of the avacado, and adding CHUNKS of it at the end for texture.
Chunks of tomatoe (red and green) can be good too.
Add a lil chopped garlic, salt, lime juice.
You might even like a splash of worsestershire.
Try adding a little onion dip mix (I do this when I don't want the raw onion taste).

Keep it simple and instead of mashing do a rough chop it is more enjoyable.Avacado

red pepper flakes
salt & pepper
sour cream
cilantro.
You can add onions and tomatoes if you wish but the more basic it is the more people it appeals to.

I take one or two fresh avacados, mash them up with a sprinkling of salt and pepper and a dash or two of tabasco sauce. If you add a little lemon juice or lime juice, it keeps it from turning brown. You can also add garlic, salsa, onions, etc.Linda Said:

SALSA GUACAMOLESalsa:
1 can (14.5 oz) Muir Glen® organic fire roasted or plain diced tomatoes, well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse salt (kosher or sea salt)
1 clove garlic, finely chopped
1 small fresh jalapeño chile, seeded, finely chopped
Guacamole:
3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped
In medium bowl, stir together salsa ingredients.
In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.
Serve with tortilla chips as desired.
Makes 12 servings (1/4 cup each).
Tip: Look for avocados that are firm, but yield to gentle pressure. If they are not quite ripe, place avocados in a paper bag, and let ripen at room temperature.

GRILL ROASTED GREEN CHILES STUFFED
WITH GUACAMOLE
8 Anaheim or long green chiles
olive oil
4 ripe haas avocados
4 ripe medium tomatoes, halved, seeded, and coarsely chopped
1 small onion, finely chopped
2 cloves garlic, minced
3 small scallions (white and green parts), finely chopped
3/4 cup chopped fresh cilantro
3 tablespoons lime juice
1 small jalapeno, seeded and finely chopped
kosher salt and freshly ground black pepper
Grill the chiles: Heat the grill or broiler. Lightly brush the chiles with oil, grill on high heat until very blackened and blistered, turning frequently, about 15 minutes. Seal the chiles in a paper bag, or foil, and allow them to steam 10 minutes. Peel away the skin being careful not to rip off the stem.
With a paring knife, make a vertical slit from the top of each chile to about 1/2 inch from the tail and remove the seeds. Be sure to leave the ribs in, or the flesh will come with them.
Prepare the guacamole:
Peel and pit the avocados and put the flesh in a large bowl. Add the tomatoes, onion, garlic, scallions, lime juice and jalapeno; mash with fork until blended but still fairly chunky.
Season to taste with salt and pepper.
Spoon the guacamole into the chiles. Serve chilled or at cool room temperature.

for my guac recipe i use avocados, roma tomatoes, red onion, garlic, lemon juice, salt and pepper, and a touch of sour cream.......the lemon juice helps in keeping the guac from turning brown...as for salsa....i am not a fan of spicy foods so my salsa is more of a fresh garden salsa kind of thing.....i use roma tomatoes, cucumber, red and green peppers, red onion, garlic, cilantro, salt and pepper, a small amount of lemon juice....depending on my mood....sometimes i will add a touch of honey and or some fresh ginger as well.
