i just did this last week with a greek vinaigrette it was awesome, but you can o it with the olive oil and s&p or even some italian dressing

4 Bell peppers
2 tb Olive oil
1 lb Lean ground beef
2 tb Butter
1 Onion; chopped
1 Small bell peppe;r chopped
2 Cloves garlic; minced
1 Knorr beef buillon cube
1 cn Corn kernels
1 c Cooked white rice
1 c shitiike mushrooms
Seasoning: Salt,pepper and paprika Saute' onion,
chopped bell pepper and garlic in butter mixture
(about 5 min) Add ground beef and fry till barely
cooked. Take bouillon cube and crumble over beef
mixture. Season with salt, pepper and paprika.Stir
till well blended. Place mixture in bowl and add corn
and the rice to the beef mixture.Stuff bell peppers.
Cook bells 350 F until bells are tender, 30 min.

ALTERNITIVES COOKING PROCEEDURES Cut bell peppers into
rings, very easy to to do HA HA. place in a coverable
cassarole dish and add meat mixture and place more
bell slices on top, cover with cheese if disired.

CREATE A SAUCE; 1 lg can of tomatoes diced into a
chunky sauce,add more dice onion, and diced bell
pepper to taste and texture.Pour this mixture into
coverable cassarole dish and place stuffed bell
peppers in it and cook off until the bells are tender
All three ways are excellent and this recipe is just
delightful.

Well i love making stuffted peppers and always goes down well at dinner parties.

you will need:
mince
3 garlic cloves
1 large onion
Bay leaf
2 fresh basil leaves
pepper cut in half from the middle of the stalk down (with seeds and stalk removed)
olive oil
salt & pepper
1 large jar of passata sauce (sived tomatoes)
fresh parmesan
x2 mozzarella
fresh breadcrumbs (made from stale bread in food processor) or toast put in food processor, if you dont have stale bread.
1 beaten egg
chili power (optional)
a deep oven dish

1. make your sauce by chopping onion and garlic and adding to pan with oilve oil. fry until soft, dont burn. add passata and stir, add bay leaf, and basil and salt and pepper, and some chili power if you like and leave to cook for bout 20-30 mins on mid heat.

2. in frying pan cook mince on its own, and drain excess fat that comes out. (I hate it when people leave the fatty liquid and not drain it)
Wait until cooked and leave to cool.
3. get a bowl and add cooled mince. dice up the mozzarelle in small cubes and add in the bowl with the mince.

4. grate some fresh parmesan, be generous and add to the mixture in bowl.
5. add beaten egg in bowl along with breadcrumbs and mix.
6. when tomato sauce is done, add a coupe of spoons into your mince mixture. stir all ingredients in bowl.
7. put your pepper halves into a deep oven tray. season with a bit of salt in the pepper halves.
8. add some sauce that you made in each pepper covering the bottom of it.
9. spoon the mince mixture in the pepper up to the top.
10. add more sauce on top of each pepper and sprinkle with parmesan.
11. put some water half way up in the bottom of the oven tray, this helps peppers to cook when they are in the oven.
12. place in oven for about 20-30 mins.

No, I have found a recipe for slow cooker stuffed red peppers online before and they came out very good. The thing with the red peppers is that they have a stronger pepper flavor and some people are not attuned to that flavor. I think that may be why Green pepper is the more commonly used choice. I happen to enjoy all sweet peppers and would've used red, yellow, orange and green for color variety, but I'm the only one in my household that likes peppers at all, so I don't really bother. Just do what you want. The flavors don't matter as long as you like it.

Tender beef simmered to a melt-in-your mouth tenderness with tomatoes, peppers and garlic. A perfect accompaniment to freshly steamed rice.


Pepper Steak with Rice

1 1/2 pounds round steak, cut into thin strips
1 tablespoon paprika
3 cloves garlic, crushed
2 tablespoons butter or margarine
1 cup sliced green onions
1 1/2 green bell pepper, seeded and cut into strips
3 small tomatoes, seeded and diced
1 cup beef broth
1/4 cup plus 1 1/2 teaspoons water
2 tablespoons cornstarch
2 tablespoons soy sauce
3 cups hot cooked rice
Sprinkle steak with paprika and allow to stand while preparing other ingredients.
Melt butter in a large skillet over medium-high heat. Add steak and sauté until browned.
Add garlic and sauté until fragrant, about 30 seconds. Add green onions and bell pepper to skillet and sauté for 3 minutes, or until tender. Stir in tomatoes and broth; bring to a boil. Cover, reduce heat and simmer for 15 minutes.
Meanwhile, combine water, cornstarch and soy sauce in a small bowl. Stir into skillet and cook until thickened.
Serve over hot rice.
Makes 6 servings.
