I have lots of fresh greenbeans this year. Yum. My favorite way to make them is toss them ina Little Olive oil, fresh garlic and sea salt. Then roast in your oven at 450 or 500 degrees for about 15 minutes. you can add almonds the last 5 min or roasting if you like. If you have leftover you can cut them into bite sized pieces, mix with a can of kidney beans or garbanzos, add vinegar and a little sugar and salt. Instant cold salad.

Partially cook the beans in salted water. Cook them only a minute or two. Then wrap a slice of bacon around an individual serving of eight or ten beans. Bake the bundles at 325 in a buttered pan for 15 minutes. These individual servings make a very lovely presentation on a festive plate.

Southern green beans... thats a staple for us.
It really depends on how many servings you are making. For a smaller family, use two strips of bacon. Cut it with scissors into little chunks and fry it in a deeper pan with plenty of minced vidalia (or yellow) onions until about 3/4 done. Add green beans with either chicken broth or veggie broth and cook on low until either hot, or you are ready to serve.
Another necessity in the south is to use Texas Pete vinegar sauce on them.. or for a substitute you can squeeze some lemon or just add a little bit of cider vinegar to them. YUM

Fried green beans use a tempura batter so that they are light and airy.

Here is the TGI Fridays copy-cat recipe:

FOR THE WASABI CUCUMBER RANCH DIP:
1/2 cup bottled ranch dressing (Hidden Valley is best)
1/4 cup cucumbers, peeled, seeded, minced
1 tablespoon milk
1 1/2 teaspoons prepared horseradish
1 teaspoon cider vinegar
1 teaspoon wasabi powder
1/8 teaspoon salt
1 pinch cayenne pepper


FOR THE GREEN BEANS:
1 egg, beaten
1 cup milk
4 cups vegetable broth or chicken broth
6 to 8 ounces fresh green beans
1 cup flour
1 cup plain breadcrumbs or seasoned dry bread crumbs
3/4 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
vegetable shortening or vegetable oil (for frying)

TO PREPARE THE DIP:
Combine dip ingredients in blender. Blend until smooth. Place in bowl; cover and chill till ready to use. Dip will thicken as it chills.

TO PREPARE THE BEANS:
Place beans in the broth. Bring to a boil and cook 15 minutes, then drain and place in cold water to stop cooking process.

Mix beaten egg with milk in a shallow bowl. Measure 1 cup of flour into another shallow bowl. Combine bread crumbs, 3/4 teaspoons salt, black pepper, onion powder and garlic powder into a third bowl.

Take a handful of beans out of the water and shake off excess liquid. Coat the beans with the flour, shaking to remove excess flour. Dip the beans, one at a time, into egg/milk mixture, then dip in breadcrumb mixture. Place the beans on a plate until all are coated.

Heat the shortening or oil to 350 degrees F in a heavy skillet (or use deep fryer). Use enough to cover the beans, about 1 1/2 inches. Fry until golden brown, about 1 1/2 minutes. Drain on paper towels.

Since tomatoes are still abundant at this time of year how bout doing a roasted medley of green beans and tomatoes. I really like using cherry or grape tomatoes for this application but you could use any really. Just drizzle all with olive oil. Sprinkle liberally with salt and pepper. Spread on a baking sheet and roast at 375 till the edges get nice and golden.

Top and tail whole green beans then steam for 2min drain place in bowl pour over soy sauce and a little bit of sesame oil ( to your own taste) and toss sauce through beans. Then I like to sprinkle them with chopped garlic and fresh grated ginger delicious.
