GRANOLA

Melt together in large pan on stove:

½ cup preserves (I used peach)
½ cup brown sugar
½ cup vegetable shortening (liquid or solid) or ¾ cup butter


Stir in above after turning off burner:

1-2 teaspoons vanilla
1 tablespoon cinnamon
dash of salt
½ cup to 1 cup nuts (I use sliced almonds)


Add:

4 cups of oats (quick or old fashioned)


Stir into hot mixture and coat oats. If there appears to be too much liquid, stir in more oats.
Put on a greased cookie sheet or 9x13 inch greased cake pan.


Bake at 350°F for 30 minutes (stir every 10-15 minutes – edges get brown before middle).
When golden brown, remove from oven and poke ½-1 cup raisins into warm/hot granola (if you like them).

Cool for about 10-15 minutes and use a spatula to remove granola from pan.

Store in an airtight, covered container. Eat as a snack or use as a breakfast cereal, serving granola with milk.

Can I use ground flax seed to substitute for wheat germ in recipes like granola?

One note: buy the whole flax seeds and grind them yourself...much cheaper and fresher.
BUT only grind about 1-1/2 cups at a time and keep what's not used in the frig as flax
turns rancid fairly quickly.

The Ingredients:


4 cups oats
1 cup pitted dates, chopped
½ cup candied ginger, finely minced
½ cup brown sugar
½ tsp. salt
¼ tsp. cinnamon
¼ cup canola oil
¼ cup honey
2 Tbsp. sugar
2 tsp. vanilla
Preheat oven to 350 degrees. Combine the oats, dates, ginger, brown sugar, salt and cinnamon in a large mixing bowl and stir to combine. In another mixing bowl, whisk together the oil, honey, sugar and vanilla. Add to the dry mix and stir until well blended. On a greased baking sheet spread the granola mixture evenly. Bake for 25 minutes, stirring a few times to ensure even baking. Let cool in the pan. Store in an airtight container for up to 2 weeks.

2 egg whites
dried fruit
apple sauce
chopped nuts (walnuts, almonds)
seeds (pumpkin, sunflower, sesame)

mix it all together, press into a pan and bake for about 20 mins until golden brown.

We Answered:

using left over oatmeal...just add an egg,some wheat germ,a touch of whole wheat flour(just enough of these dry ingredients to thicken things up a bit)then add whatever dried fruit and/or nuts that you like
spread about an inch thick in a greased cake pan and bake at 350 for about twenty mins once this cools either cut into bars or crumble

sometimes i add some honey and/or molasses
