A Chinese stir fry is good for duck or goose. Goose with Chinese plum sauce. That is a Beijing specialty. Goose soup, but I would use the bones to make the stock. Goose sandwiches on Rye bread with a little mustard.

1 leg of lamb
75 g fresh breadcrumbs
75 g chopped bacon
8 tablespoons finely chopped onion
1 teaspoon finely chopped parsley
1 teaspoon mixed herbs
1/2 teaspoon lemon rind
Salt and pepper
1 beaten egg
Make an incision in fleshy part of leg. Mix all ingredients well. Stuff the lamb and tie up with string. Roast 15-20 minutes per half kg.

Jalapeno (cut into small strips - onion is a good mix too)
Cut goose breast into small pieces (usually around 1/4 inch thick - MEDIUM RARE), wrap with bacon (jalapeno and onion in the bacon) and secure with toothpick. Grill or broil until fully cooked. This is by far the easiest goose breast recipe to make and is truly delicious!

1 domestic goose (10 to 12 pounds)
1 cup chopped celery
1 cup chopped onion
2 tablespoons butter or margarine
3 cups chopped peeled apples
2 cups raisins
8 cups cubed day-old white bread
2 to 3 tablespoons sugar
1 teaspoon salt
1/2 cup apple cider
1/2 cup water
Sprinkle the inside of the goose with salt. Prick skin well; set aside. In a skillet, saute the celery and onion in butter; transfer to a large bowl. Add the apples, raisins, bread, sugar and salt. In a small bowl, beat eggs, cider and water. Pour over bread mixture and toss lightly. Stuff into the goose. Place with breast side up on a rack in a large shallow roasting pan. Bake, uncovered, at 350Â° for 3 to 3-1/2 hours or until a meat thermometer reads 185Â°. Drain fat from pan as it accumulates. Remove all dressing. Yield: 8-10 servings.
