Don't use Sweet Gherkins. Try to find a kosher deli and I'm sure you'll find them there -- either cornichons or regular gherkins. You also might try to find an international foodstore or order online. Something as simple, plain, yet elegant as Steak Tartare (which is MARVELOUS!) needs the proper ingredients. I don't believe Dills will give you a satisfactory result, they're not tart enough.Try these:

I honestly don't think this will work properly as the cukes just won't stay crisp. But if you want to give it a try, then why not try with just a few? Do 4-5 cucumbers (let sit in water, ice , and some salt for 3 hours) and then place them in a sterilized jar and add some of the vinegar solution you can make up. I keep extra in the fridge in Mason jars and reuse with the next batch of pickles. Because it is made with vinegar it will not go bad. Then in a few days try these and see how they turned out. Process the rest the way the recipe calls for. If the whole pickles work you can always buy more. But I really think I'd stick to slicing them....Nothing tastes better on a cheeseburger than some homemade B&B pickles!If it is the chore of having to thinly slice the cucumbers, then do yourself a favor and go to a department store and buy yourself a kitchen mandolin. You can have all those cucumbers sliced within a fraction of the time it would take to do by hand. I will leave a resource so you can see what one of these looks like. I bought mine from Target a couple of years or so ago, and The Kitchen Store also sells them. I paid between $12.99 for mine.
Here's a tip: I sometimes will end up with a pile of cukes (we grow our own) and I won't have time to make them. What I often do is slice them all up at night and place in a cooler (depends on how many I do whether I use my husband's lunch box-sized cooler or the larger cooler), cover with cold water, add plenty of ice, 1/2-1 cup of pickling salt (depends on how many!), shut the lid and go to bed. In the morning I dump them into colanders (I have several), rinse well, and then process like the recipe says to do (this is after I've sterilized my jars and have my brine almost ready) and I end up with nice, crisp, and delicious pickles that everyone loves. Ingredients:

3 lb Pickling Cucumbers
BRINE---------------------------------
1/2 c Vinegar

2 c Sugar
2 c Vinegar
1 c Water
---------------------------------COLD --
4 c Water
1/2 c Salt
SYRUP---------------------------------
8 All Spice Balls
6 Cloves
1 Stick Cinnamon
Preparation:
Wash cucumbers and put in jars whole. Cover with cold brine and store until ready to use. When ready, drain pickles and cut into pieces. Cover with boiling water and 1/4 t alum, let stand until cool. Drain. Put pickle spices in a cloth bag and boil in syrup mixture. Pour hot syrup on pickles and let stand in open jars for 2 days. Drain syrup into a pan and heat with spices and add 2 more cups sugar. Bring to a boil. Put pickles into clean jars, pour syrup over and seal. Pickles are ready to eat when cool.
