This is a beautiful, basic ghee...be sure to watch it so that it doesn't reach the burning point...1 pound unsalted butter
Put the butter in a heavy, medium-sized pan. Turn the heat on to medium until the butter melts.
Turn down the heat until the butter just boils and continue to cook at this heat. Do not cover the pot. The butter will foam and sputter while it cooks. Whitish curds will begin to form on the bottom of the pot. The butter will begin to smell like popcorn after a while and turn a lovely golden color. Keep a close watch on the ghee, as it can easily burn. After a while it will become a clear, golden color. You will have to take a clean, dry spoon to move away some of the foam on top in order to see if the ghee is clear all the way through to the bottom. When it is clear and has stopped sputtering and making noise, then it needs to be taken off the heat. Let it cool until just warm. Pour it through a fine sieve or layers of cheesecloth into a clean, dry glass container with a tight lid. Discard the curds at the bottom of the saucepan. The ghee is burned if it has a nutty smell and is slightly brown.
1 pound of butter takes about 15 minutes of cooking time. The more butter you are using, the more time it will take.
Ghee can be kept on the kitchen shelf, covered. It does not need refrigeration. The medicinal properties are said to improve with age. Don’t ladle out the ghee with a wet spoon or allow any water to get into the container, as this will create conditions for bacteria to grow and spoil the ghee.

You can find ghee in any Indian Grocery Store and if you want to make at home make pure ghee its good for health too and you can make it with butter heat the butter in a pan on slow medium flame or heat when it goes half in quantity you put in pan means it is ready keep a side in to normal Temperature and it will set in cold and you can store it for monthsin air tight jar .You can use that pure ghee like oil to cook any dish and it is very good for health.Pauline Said:

Seviyan or Fine Noodle PuddingIngredients
6 nos. Dry dates
1 tablespoon Raisins
1 tablespoon Cashew nuts
1 tablespoon Sunflower seeds
1 tablespoon Blanched almonds
1 tablespoon Blanched pistachio
21/2 tablespoons Ghee
1/4 cup Vermicelli
4 cups Milk
2 teaspoons Cardamom powder
3 1/2 tablespoons Sugar
Method:
Soak the dates overnight. De-seed and chop into 4 pieces.
Heat ghee and sauté the raisins, cashewnuts, chironji seeds, almonds and pistachios for 2-3 minutes. Drain and mix with the chopped dry dates. Set aside.
In the same ghee, fry the vermicelli on a low flame for about 2 minutes, stirring continuously. Remove from heat and keep aside.
Boil the milk in a deep bottomed pan and add the vermicelli and sugar. Stir until the sugar dissolves. Cook uncovered on a low flame for about 10 minutes,stirring often. Add the fried dry fruits and cardamom powder, cover and cook for 3 minutes.
Serve hot or cold in individual bowls.

First of all , i appreciate that you try out things at home; only thing ,you should know the techniques for such ingredients ,as any lapses result in stuff getting spoilt .Ghee made from unsalted butter need not be refridgerated, but can be kept in an airtight plastic container ,and used within a month or so ; Metal is not advisable.
Why are you scared of smelling and finding out whether it is good or not ?
Otherwise just melt a little quantity separately , and if gives out a fragrance typical of ghee ,you can still use it.
Prepare Veg.Biryani with refined oil ,and use ghee only for flavour , on steaming biryani , a teaspoon or so.
If you want to finish it off, roast suji i ghee, when the colour changes, add boiling water,cook for 10 minutes by turning and then covering with a lid, add sugar,cardamom powder, raisins and you have a yummy suji halwa made in pure ghee!
