Gem Squash Recipes

We Answered:I didn't know what a gem squash was until I looked it up. It's closest cousin to butternut squash. Could only find butternut squash recipes were microwaved.

We Answered:Fish with Leeks and Raisins.
Firm white fish fillets such as sole or cod.
Melt a little butter in a pan (a non-stick pan, if you have one).
Cut the white part of the leeks into narrow rings (separate them) and cook in the melted butter until soft - a few minutes.
Season the fish fillets with salt and pepper and place on top of the leeks.
Sprinkle a small handful of raisins over the fish.
Reduce heat, cover and cook until fish is done.
Note: The fish is done when you can easily penetrate it with a knife, not when it flakes - then it's overdone.
Serve on a bed of rice or noodles.
The entire cooking time should be no more than 20 minutes.
Take a bunch of leeks with you (just the white part); they'll be good for a couple of weeks. You could also substitute sliced onion for the leeks.
