Keep it simple! Roast it! Cut the top of the garlic off, *just the stem part* keep the peel on. place on a sheet of aluminum foil, drizzle with some olive oil, salt and pepper, wrap loosly with tin foil and roast at 400F for about 30-45min. when done, take out, let cool for 10 min, and press with a fork, the garlic will ooze out the top and is incredible to spread on some bruscetta, or foccacia bread or just toss in with some buttered pasta!Valerie Said:

Use a little olive oil to stir fry your veggies and chicken, then remove them from the pan. In the same pan, heat leftover oil (add more if you need to) and add:1 cup chicken broth that has 2 tablespoons corn starch and 1/4 cup soy sauce or terriaki sauce.
Heat this in the pan until thick and bubbling. You may need to add more salt or soy sauce to taste. You can add a little honey for sweetening if you want and some terriaki sauce. Either way, this makes a great basic brown stir-fry sauce.
Once you've got your sauce tasting the way you want it, return the veggies and the chicken to the sauce, stir to coat, and then serve over white jasmine rice. Try to use chopsticks if you can for festivity! :)

Rather than bombard you with recipes just a couple of general pointers.They probably used pancetta rather than bacon so that will be one difference. Also if it was italian style carbonara rather than the Americanised version it wouldn't have cream in it.
Also make sure that you use fresh parmesan... oh, and they may also have had pecorino in it too.
Edit: Deva, Heavy Cream is a US term for a rich cream with a fairly high fat content of around 36% or more. Its use in the recipes of other posters is to make a cream based sauce for the spaghetti.

i don't knwo which one you're referring to but you can just try marinating smashed garlic (don't mince them as you'll jave to take them out in the end) in a little mayonnaise and cream. just a tad of cream to make the mayo to the runny consistency that you want.Pearl Said:

IngredientsFor the chicken
1 large whole chicken weighing about 2kg/4½lb, or 2 small whole chickens weighing about 1kg/2¼lb each
salt and freshly ground black pepper
2 lemons, 1 halved, 1 juice only
1 head garlic, cut in half
30g/1oz fresh lemon thyme
150g/5½oz unsalted butter, softened
100ml/3½fl oz water
For the chicory salad
1 garlic clove, crushed
30ml/1fl oz white wine vinegar
1 tbsp Dijon mustard
100ml/3½fl oz vegetable oil
salt and freshly ground black pepper
5 chicory, chopped
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. For the chicken, season the chicken with salt and freshly ground black pepper and place the halved lemon, garlic and lemon thyme inside the chicken. (If using two chickens divide these ingredients between the two.) Place the chicken onto a roasting tray, smearing the skin with butter. Place in the oven and cook for 1-2 hours, basting occasionally until completely cooked and the juices run clear when a skewer is inserted into the thickest part.
3. Ten minutes before removing the chicken from the oven, pour the water into the roasting tray. When the chicken is cooked, remove from the oven and squeeze the fresh lemon juice over the chicken. Leave to rest for 15 minutes before straining the juices into a pan to keep warm.
4. For the chicory salad, place the garlic, white wine vinegar and Dijon mustard into a bowl. Whisk in the oil gradually and season with salt and freshly ground black pepper. Add the dressing to the chicory and mix well.
5. To serve, carve the chicken and place on to serving plates with the chicory salad and some of the juices from the chicken pan.

Fresh herbs added at the end of the cooking time no matter what method you use to cook the food bring a lot to a dish. I'd suggest that she starts a dish and at the end adds onions and garlic to a separate larger dish. I often cook a meal two ways for people who have food issues. It just takes one extra pot to make it special for you Mom.
