Rabbit In Mushroom Cream Gravy Serves 4-5




2 rabbits, dismembered
flour
6 tbls. butter
2 cloves of garlic, peeled and sliced thin
1 1/2 c. chicken broth
1/2 c. white wine
1 tsp. dried tarragon
1/2 pound small white mushrooms, washed
salt and pepper to taste
1 tbls. Marsala wine (optional)
1 1/2 c. heavy cream

Alsatian Boar Chops

4 large center-cut loin smoked wild boar chops
1 lb. sauerkraut
2 Tbsp butter
2 Tbsp salad oil
salt and pepper
1 medium onion, minced
1 medium clove garlic, minced
1/8 tsp chervil
1/8 tsp rosemary
1/4 tsp sage leaves
4 finely chopped juniper berries
1 cup dry white wine
1 cup chicken broth

Preheat oven to 350 degrees. Drain and squeeze the sauerkraut to eliminate as much juice as possible (reserve juice in frig for future marinades for other meats). Melt butter in a dutch oven and add the oil. Sprinkle the chops with salt and pepper and saute until light brown on both sides. Add onion, garlic, chervil, rosemary, sage and juniper berries and continue to saute about 5 minutes. Add sauerkraut, white wine and chicken broth, place lid on dutch oven and bake in oven for 1 hour and 15 minutes until all liquid has been evaporated from kraut. Season to taste and serve with boiled potatoes or spaetzle.

Cheese Stuffed Meatballs

1 lbs. ground meat (moose, deer, bear, elk, beef, pork etc.)
½ cup fine bread crumbs
1 egg
2-3 tbsp. milk
1 tsp. season salt
½ tsp. pepper
¼" cubed cheese (sharp is better)
Mix meat with all ingredients except cheese, shape meat into balls with a small piece of cheese inside. Best if chilled for an hour, but not necessary. Pan fry in oil or deep fry. Serve on toothpick with sauce for dipping

Honey Mustard Sauce

½ cup Mayonnaise (mayonnaise not Miracle Whip)
2 tbsp. liquid honey
1 tsp. mustard
Mix mayonnaise, honey and mustard. Amounts can be varied depending on tastes.



Venison Tenders

INGREDIENTS
Cut venison in strips 1/2" by 1/2" and 4" long.
Marinate 8 to 12 hours in the following:
2 cups milk
1 teaspoon seasoning salt
1 teaspoon dry mustard powder
1 egg
1 teaspoon ( or less) garlic powder
black pepper to taste (I use 1/4 teaspoon)
1 teaspoon onion powder or dehydrated onion

Directions
Remove venison strips from the marinate and let dry.
Dip in egg whites.
Dip in crushed dry Pepperidge Farms stuffing mix.
Fry quickly in a quarter inch of very hot oil.



Duck or Goose Nuggets

INGREDIENTS
Cubed duck breasts or goose
1 bottle BBQ sauce
2 cans of beer
Bacon
Toothpicks
Glass of water

Directions
Mix the BBQ sauce with 1 1/2 cans of beer.
Place the cubed duck breasts (approx 1 to 1 1/2 inch) in this marinade overnight.
Mix every now and then.
Take the nuggets out, wrap with bacon and secure with toothpicks.
Throw the nuggets on the grill on medium heat. Be sure to watch the grill, as the bacon grease causes flareups that can turn your tasty nuggets into coals in no time. This is where the water comes in handy.
Baste them with BBQ sauce.
Grill them until they are medium to medium rare, take off and enjoy. This "finger food" makes a great appetizer at parties.

From my research potjiekos is game meat with starch (rice or potatoes) cooked in a pot.

This is how my zada cooks squirrel (and rabbit) - I've personally ate this & it's great!
He puts the meat in a crockpot and adds a can of cream of mushroom soup with pepper, & lets it cook all day.
That's it.
You can add veggies: carrots, potatoes, celery, onion, all to your taste.

Personally I like to take meat, add a packet or 2 of brown gravy, and some potatoes, onions, carrots & celery & let that cook all day.

Jill, I know plenty of people that eat dove, quail, etc. I will admit that I haven't heard of anyone that has eaten crow, though.

I can imagine that if you just clean the dove, season it with your favorite seasonings, and wrap it in foil and let it cook over a fire until done, it would be good. Honestly, I've never had dove before, but my dad loves dove and oyster gumbo.

EDIT: I would be very wary of eating crow. The crows and black birds and whatnot around here carry all kinds of diseases, such as coccidiosis. Very unpleasent.

EDIT 2: I found some recipes that you could try when you get home. :)
