FRUITY COMPOTEINGREDIENTS:
1/2 cup sugar
1 1/2 cups water
1-inch piece fresh ginger, peeled and thinly
slivered
1 cup dried fruit mix
2 cups fresh or frozen cranberries
1 orange, peeled and sectioned
1 Granny Smith apple, peeled, cored and cut into
small, thin wedges.
DIRECTIONS:
In large saucepan, combine sugar, water and ginger.
Bring to a boil over high heat. Add dried fruit mix.
Bring back to a boil and immediately reduce heat to
low simmer. Cook, uncovered, until fruit is not quite
tender, about 5 minutes. Add cranberries and simmer,
stirring occasionally, until cranberries pop. Stir in
orange and apple. Remove from heat and allow to cool
down.
Serve warm or at room temperature.
Yield: 6 servings.
Fruit Cookies - No Sugar, Eggs Or Flour
Yield: 24 Servings
3 Med. sized ripe bananas
1/3 c Peanut or safflower oil
1 ts Vanilla
1/8 ts Salt
1 1/2 c Rolled oats
1/2 c Uncooked oat bran
1 1/2 c Coarsely chopped mixed dried fruits (such as dates, apricots and
raisins)
1/2 c Chopped nuts (walnuts, almonds or pecans)
Preheat oven to 350 degrees. Grease 2 large cookie sheets.
Mash bananas in large bowl until smooth. (You should have about 1-1/2 cups.)
Stir in oil, vanilla and salt.
Add oats, oat bran, mixed fruits and nuts; stir well to combine.
Drop by rounded measuring tablespoonfuls onto prepared cookie sheets, about 1
inch apart. Flatten out slightly with back of spoon.
Bake about 20-25 minutes or until bottom and edges of cookies are lightly
browned. Transfer cookies onto wire rack to cool completely. Store in
refrigerator.
Makes 2 dozen.
Spring Fruit Trifle
Prep time : 15 min
Ready in :45 min
Ingredients:
36 NILLA Wafers
2 Tbsp. orange-flavored liqueur or orange juice
3 cups seasonal fruit, such as sliced kiwi, blueberries
and/or sliced strawberries
2 pkg. (4-serving size each) JELL-O Vanilla Flavor
Instant Pudding & Pie Filling
3 cups milk
1 pkg. (6 squares) BAKER'S Premium White Baking
Chocolate, melted, cooled slightly
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
Preparation:
Break wafers coarsely into 2-1/2-qt. clear glass serving
bowl.
Sprinkle with liqueur; top with layers of fruit.
Prepare pudding as directed on package, using only 3 cups
milk.
Refrigerate until pudding starts to thicken.
Add chocolate; stir with wire whisk until well blended.
Gently stir in half of the whipped
topping.
Spoon over fruit; top with remaining whipped topping.
Refrigerate at least 30 minutes or overnight.
Three Fruit Drink
* 1 cup yogurt flavor of your choice
* 1 banana peeled and chunked
* 1 peach washed -- pitted, and chunked
* 1/2 cup strawberry washed and hulled
* 1/2 cup milk or whole milk
* sweetening to taste (honey or brown sugar)
Place ingredients in blender or food processor and purée. If too thick add more milk. Serve well chilled or add 4 or 5 ice cubes before serving.
Tutti Fruity Kabob
* Orange segments
* 12 oz cheese
* Watermelon balls
* Pineapple
* Red cherries
* Black and white grapes
- Cut half the cheese into cubes approximately 1/2" square.
- Cut remaining cheese into triangles.
- Prepare a selection of fruit 8-10 pieces of fruit per kebab.
- To assemble the kebabs, thread pieces of cheese and fruit alternately onto skewers.
