Try this casserole, and then you can microwave it quickly in the morning if you cut the casserole into servings and individually package it up.

12 eggs
1 package turkey bacon, diced, fried well until very crisp (15 minutes at least, stirring constantly)
1 bunch green onions, diced
1 diced large tomato
dash of dried basil
salt, fresh ground pepper
8-12 ounces shredded sharp cheddar cheese

mix all ingredients except cheese and pour into a buttered 9X13 pan. Top with cheese, cover with foil. Bake at 350 until set in the middle. Remove foil 10 minutes before taking out of the oven. The whole casserole usually takes about 45 minutes to bake. You can serve it hot, or cut it up and store it and take one square out every day for breakfast.

Devilled Eggs

INGREDIENTS
6 eggs
2 tablespoons mayonnaise
1 teaspoon prepared Dijon-style mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper
DIRECTIONS
Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
Slice eggs in half lengthwise. Remove yolks and place in a medium bowl. Set aside egg whites. Mashing with a fork, mix mayonnaise, Dijon-style mustard, salt and black pepper with the egg yolks.
Fill the hollowed egg white halves with the yolk mixture. Sprinkle with cayenne pepper, adjusting the amount to taste. Cover and chill in the refrigerator until serving

Here is one for the kids.

1 packet 2 minute noodles - flavour of your choice.
3 eggs
tomatoes
mushrooms
ham/bacon
peas
corn
cheese
whatever else you fancy- think of omelette ingredients!!!

Cook the noodles according to packet instructions but leave out the flavour sachet. Beat up the eggs and add a little milk or cream. Add the flavour sachet to the eggs. Heat a fry pan and add a little butter and oil.

Put the noodles into the bottom of the pan and top with the eggs. If you want you can pre-cook some of the other ingredients such as the ham/bacon, mushrooms.
Add your favourite ingredients and sprinkle with cheese. Wait until the egg is almost set and then remove from the pan onto a serving dish. The residual heat that is still in the egg will finish cooking it.

You could also make a zucchini slice. Grate up lots of zucchini, chop up some onion and bacon. Beat up about 6-8 eggs and add a little cream salt and pepper. Mix together with the zucchini onion and bacon. Pour into an oven dish and sprinkle some grated/shredded cheese over the top and bake in a hot oven until just set and the top is golden.

Hard boil a few eggs. 4 minutes boiling will be good.
Quickly pour off water and shock with ice water. Let sit til cool enough to handle.
Place peeled eggs in a bowl. Mash with a potato masher.
Add mayo or Miracle Whip to taste. A few spoonsful of sweet pickle relish. A dash of mustard if you like. A dash of Tabasco sauce if you like. Salt and pepper if you like.
Mix it all up, taste, adjust seasonings if necessary. Dig in and enjoy,

Try this..... easy and delicious....

Asparagus & Eggs on Toast with Tomatoes & Ham
Perp 15 min / Cook 6 min (4 Servings)

24 thin stalks asparagus or 12 thick stalks, trimmed
4 slices seven-grain bread
4 tsp Dijon mustard
8 slices 97% fat-free ham
2 hard-cooked eggs, peeled and sliced
8 thin slices tomatoes
2 slices provolone cheese, cut into thin strips

1. Preheat broiler.
2. In skillet of simmering water, cook asparagus until crisp-tender, 3 to 4 minutes. Drain well.
3. Place bread slices on baking sheet. Broil 3 to 4 inches from heat until bread is toasted, about 1 minute each side.
4. On each bread slice, spread 1 tsp mustard then arrange 2 slices of ham, 6 thin or 3 thick asparagus spears, half of 1 sliced hard-cooked egg, 2 tomato slices, and a quarter of the provolone strips.
5. Broil sandwiches until cheese is melted and golden brown and sandwich is heated through, 1 to 2 minutes.

Lastly........

Egg Burritos with Roasted Bell Peppers
Prep 5 min / Cook 5 min (4 servings)

4 flour tortillas (8 inches), warmed
1 tbsp vegetable oil
8 large eggs, lightly beaten
1/4 tsp salt
1/4 tsp black pepper
1 cup roasted red bell pepper pieces, seeded and cut into 1/2-inch slices
2 tbsp chopped cilantro
1/4 cup bottled salsa, at room temperature

1. In medium nonstick skillet over medium heat, heat oil. Add eggs, salt, and pepper. Stir until eggs start to thicken slightly, 1 to 2 minutes. Stir in peppers and cilantro. Cook, stirring occasionally, until eggs are soft-scrambled, 2-3 minutes.
2. Spoon quarter of egg mixture in middle of each tortilla. Top each with 1 tbsp salsa. Fold edges of tortilla over, then roll to enclose filling.

*** To warm tortillas, preheat oven to 350 deg F. Steck up to six tortillas at a time and wrap loosely in aluminum foil. Warm in oven for 8 to 10 minutes. Leave wrapped until ready to serve.

Did you know..... that corn tortillas are made from only cornmeal and water, but flour tortillas have wheat flour, vegetable shortening or lard, water, and salt?
