170 g self raising flour
170 g butter
140 g sugar
115 g mashed durian
4 egg yolks
4 egg whites (beaten)

Preheat oven to 180C or 350°F.
Cream butter and sugar until fluffy.
Add in the egg yolks one at a time.
Beat well before adding the next yolk.
Add durian meat and beat well.
Next, add in the beaten egg whites.
Last but not least, add in the flour.
Put in a 8 x 8 greased pan and bake for an 1 hour.
Warning: Durian meat does smell a tad strong so it might be a good idea to warn your family members when you are about to try this cake.

Thai Sticky Rice with Mango [Khao Neeo Mamuang]

2 cups sticky rice (steamed over bamboo steamer for 45 minutes)
2 cups coconut milk
1 cup sugar
1/2 teaspoon salt
3 ripe, juicy mangoes, cut into thick slices
1 tablespoon toasted sesame seeds (optional)
1 tablespoon tapioca starch
1 tablespoon sugar
1/4 teaspoon salt

Method
Prepare the 2 cups sticky rice as per our instructions. While sticky rice is steaming, mix together 1.5 cups coconut milk, 1 cup sugar, 1/2 teaspoon salt and bring to a boil. Set aside to cool (for a more fancy preparation, you can strain the coconut milk in a cheesecloth before setting to cool, but this is not necessary). Immediately after sticky rice is cooked, and still hot, put it into the coconut sauce and stir together well. Cover for 1 hour (or less is ok) and let cool.

Topping
Mix 1/2 cup coconut milk with 1/4 teaspoon salt, 1 tablespoon sugar and the tapioca starch. Bring to a boil.

Put the sticky rice and mangoes on a serving dish. Pour the topping sauce over the sticky rice and sprinkle with the toasted sesame seeds.

I am a former chef and worked in Singapore and travelled to Thailand and did have it once not easy to find, and if it was served outside of Thailand it was an adapted form of the same dessert, the one I had was in a sweet tempura type batter made with rice flour and coconut milk and they whipped the egg white foamy to make it crisper, and it was served like th Chinese banana dessert with a sugary coating and sesame seeds.

I just remembered they make a fritter with the durian paste and rice flour, steam it and then dip in batter and fry, serve like my frist section answer.
