RICE AND CHICKEN PILAF WITH DRIED CURRANTS AND TOASTED ALMONDS1 tablespoon olive oil
1 onion, cut into wedges
12 ounces skinless boneless chicken (thighs or breasts) cut into strips
1 garlic clove, minced
1 1/2 cups white rice
1/4 cup dried currants
2 cinnamon sticks, broken in half
4 cups chicken broth
2 tablespoons sliced almonds, toasted
Heat oil in heavy large deep skillet (preferably nonstick) over medium-high heat. Add onion and sauté until golden, about 5 minutes. Sprinkle chicken with salt and pepper. Add chicken and garlic to skillet; sauté until chicken is no longer pink, about 4 minutes. Stir in rice, currants, and cinnamon sticks. Add broth and bring to boil. Reduce heat to low; cover and cook until rice is tender and most liquid is absorbed, about 20 minutes. Season with salt and pepper. Transfer to bowl. Discard cinnamon. Sprinkle with almonds.

Can i use raisins instead of currants in my recipe?We Answered:
When you are cooking you can change the recipe how ever you want I use them only as a guide.Currants are tart and raisins are sweet so you may have to adjust the sugar that is in the recipe
You could also use cranberries or any other dried fruit some people will also use lemon zest when using cranberries
And in most food stores they have other dried fruit.
Depending on the moister content of the stuff that you are using instead of what is called for you may have to adjust the wet ingredients as well so just add more or less of what ever they call for water or milk
do not add extra oil or eggs because this will stop the rising process and make the cake heavier
You could also use fresh fruit as well like cranberries (they come dried as well) or raspberries or blackberries I use the froze kind but cut back on the liquid in the recipe
Just use your own likes and dislikes and go nuts

A currant is a little red berry that grows on a bush. It has a tart taste. My Great Grandfather used to have a current bush in Connecticut, and I ate them from the bush as a child.Willie Said:

They freeze well! So you could maybe freeze some for a nice winter pudding/cheese cake, naturally jelly is nice, so are syrup and home made wine using them but i like to use them for .... Chutney! They give such a gorgeous taste! Here's my favourite recipe (For chutney)4 tomatoes
Their weight in redcurrants
1 medium onion (Chopped)
3 tablespoons brown sugar
1 teaspoon garam masala
1 teaspoon ground ginger
175 ml malt vinegar
1 teaspoon salt
1 tablespoon clear honey
Natural plain yoghurt
Sliced green chili
Wash tomatoes and fruits, place in heavy pan witrh the onion, add sugar, garam masala, ginger, vinegar, salt and honey, half cover pan with lid cook over low heat for 20 minutes.
Mash tomatoes and fruit with a fork to break them up, keep cooking on higher heat til chutney starts to thicken.
Put chutney in a bowl, cover, keep in fridge until needed (i put mine in jars) When needed, serve chilled, garnished with yoghurt, sliced chilli and mint leaves.
My husband loves it so much .... I always make enough to last him for the winter! he loves it with Indian food but also with a cheese sandwich/ham/beef sandwich etc.
