Cream of tartar is also used to give a creamier texture to sugary things like candy and frosting and to stabilize and increase the volume of beaten egg whites.

It's basically the same as baking soda! If you don't have it google, or ask on Answers of course, & see what the substitution rate would be... If you have baking soda & it would be appropriate for what you're cookin' up.

Cream of Tartar is used in cookies mainly as a substitute for baking powder. Baking powder is mainly a combination of cream of Tartar and Baking soda. You can use as a substitute for Baking powder 1/4 teaspoon of baking soda plus 1/2 teaspoon of cream of tartar.

MM (Marshmallow) Fondant Recipe

16 ounces white mini marshmallows (use a good quality brand)

2 to 5 tablespoons water

2 pounds icing sugar (use C&H Cane Powdered Sugar for the best results)

½ cup Crisco shortening (you will be digging into it so place in a very easily accessed bowl)

The recipe instructions are quite lengthy, but with pics, in the link provided below. No need for candy thermometer, cream of tartar, corn syrup, or glucose. HOWEVER, commercially made marshmallows (basically anything marshmallow-like you buy from the store) is made from corn syrup. The other link is for a marshmallow recipe without corn syrup.

Stabilizing egg whites, increasing their heat tolerance and volume;
Frequent combination with baking soda (which needs an acid ingredient to activate it) in formulations of baking powder.
Why not try this recipe which is a simple chemical free recipe.
with a mechanical whisk beat six eggs and 125gr of sugar until a stiff foam(best done in a kenwood mixer type machine) then slow the machine right down and gently fold in ,using the machine,125 gr of sifted cake flour.For chocolate sponge sift in with the flour 20gr cocoa though this would benefit from 5gr of baking powder.Pour into a greased ,floured tin and bake for approx 20 min at 180c
