Yields: 8 servings
"Chopped pecans and crushed pineapple are stirred into sweetened condensed milk and lemon juice"
INGREDIENTS:
1 (9 inch) prepared graham
cracker crust
1 (14 ounce) can sweetened
condensed milk
1/2 cup lemon juice 1 (8 ounce) can crushed
pineapple, drained
1/2 cup chopped pecans
1 (16 ounce) package frozen
whipped topping, thawed
DIRECTIONS:
1. In a large bowl, whisk together condensed milk and lemon juice. Stir in drained pineapple and chopped pecans. Fold in whipped topping.
2. Pour mixture into prepared crust. Chill before serving.

CHOCOLATE COOL WHIP DESSERT1 c. flour
1 stick melted butter
1/2 c. pecans
FILLING:
1 lg. Cool Whip
1 can or 2 c. chocolate pudding
1 tsp. vanilla
1 (8 oz.) cream cheese
Mix crust and pat into a 9 x 13 inch pan. Bake at 350 degrees for 10-12 minutes. Do not over bake. Let cool.
Blend Cool Whip (leave 1/3 of container for top), cheese and vanilla. Put mixture on cooled crust. Spread chocolate pudding on cheese mixture and then top with balance of Cool Whip. Let stand overnight or at least 8 hours.

1 regular size fat free Cool Whip
1 small fat free, sugar free chocolate pudding
Mix dry chocolate pudding into Cool Whip. Refrigerate and enjoy in place of regular cool whip.

Sweet Corn and Shrimp Cakes
6 pieces corn on the cob, kernels removed; about 3 cups
2 tablespoons all purpose flour
2 large egg whites
1/4 cup fat free evaporated milk
1/2 teaspoon table salt
1/4 teaspoon chili powder
2 ounces cooked shrimp, tiny salad size, about 1/2 cup
1/2 cup salsa
2 tablespoons cilantro
Puree 2 cups of corn in a food processor. Add flour, egg whites, milk, salt and chili powder; pulse several times to combine. Stir in shrimp and remaining 1 cup of corn. Coat a nonstick skillet with cooking spray and heat over medium high heat. To make cakes, place 1 tablespoon of batter in skillet to make each of 16 cakes. Cook in approximately three batches of five or six cakes each until bottoms of cakes are browned, about 2 minutes. Turn over and cook until lightly browned on other side, about 2 minutes more. Serve each cake topped with salsa and garnish with cilantro. Yields 2 cakes and 1 tablespoon of salsa per serving.
Serves 8. 2 points per serving.

well, I don't think these two items are really interchangable. But you're in a pinch, 2/3 cup whipping cream makes 1 1/3 cup whipped cream, so I would use 1 1/3 cup whipped topping, the two are interchangable in amounts.cool whip recipes?We Answered:
Use the "lite" cool whip. Spread on chocolate flavored graham crackers, top with another cracker. Wrap the crackers in plastic wrap then freeze till hard. It tastes like an ice cream sandwich but is much lower in fat and calories.
