yes , you can use olive oil , turn the heat down to 375 , add 10 min. cooking time so the olive oil does`nt burnthe flour will turn to a crust when combined with the marinade you bake it

I would spray it anyway..A light spray isn't going to mess anything up..I would just make sure it's original and not some flavored kind. When I'm baking something in the oven I ALWAYS use cooking spray to assure no sticking and everything turns out fine.
