Salt Cod and Lobster Cakes
Ingredients:
½ pound boned Salt Cod
¼ pound Lobster meat, cooked
2 Tbsp olive oil
¼ cup red bell pepper, diced small
¼ cup yellow bell pepper
¾ cup onions, diced small
2 Tbsp Parsley, fresh
salt
pepper
1 cup cooked mashed potatoes
1/2 cup vegetable oil
¼ cup milk
1 cup flour
2 cups breadcrumbs
Creole seasoning
3 large Eggs


Directions:
1. Soak salt cod in a bowl of cold water in the refrigerator for a day, changing the water frequently.
2. Add the oil to a large skillet and sauté the onions and peppers for about a minute.
3. Season with salt and pepper.
4. Break up the salt cod and add to the pan. Cook for 6 to 8 minutes or until cooked through.
5. Remove from heat and cool.
6. In a mixing bowl blend the salt cod mixture with the lobster meat, potatoes and 1 egg.
7. Season further with salt and pepper. Form into 12 cakes.
8. In a separate bowl whisk together two remaining eggs and milk.
9. Dredge each cake in flour, then in the egg wash.
10. Season with Creole seasoning and coat with breadcrumbs.
11. In two large skillets add a ¼ cup of oil.
12. Pan fry the cakes until golden brown and heated through, about 4 or 5 minutes on each side.

Salt Cod Fisherman's Stew

Ingredients:
1 lb Salt Cod
1 Tbsp olive oil
2 cloves garlic, minced
1 large yellow onion, chopped
2 stalks celery, sliced
1 green pepper, chopped
2 carrots, sliced
1 15 oz can diced tomatoes
2 cups tomato juice
1 tsp oregano, dried
1/2 tsp thyme, dried
1 tsp parsley, fresh
1 bay leaf

Directions:
1. To prepare Salt Cod: Let cod soak in cold water for at least 24 hours before use. Change water 3-4 times. Cut into chunks after preparation.
2. To prepare Stew: In a large saucepan heat olive oil over medium high heat and sautè garlic, onion, celery, green pepper and carrots about 10 minutes or until slightly tender.
3. Add tomatoes, tomato juice, oregano, thyme, parsley and bay leaf. Simmer for 20 minutes.
4. Add the cod and cook 10 more minutes.
5. Remove bay leaf and serve.

Don't like cod too much. I have been eating it recently due to a diet plan I am following.

I found a Italian Dressing made by Kraft in the store that is a Red Pepper Parmesan. Good for marinating it in and then grilling or baking.

Cod basically has no taste, can be rubbery and tough if cooked too long.

Talipia is my choice for a nice tasting fish, with or without seasonings.

You can also sprinkle it with lemon pepper, blackened seasoning or just squirt lemon on it and some dill weed.

Portugueses have the best cod recipes ever:

"An excellent cod fish dish. You must soak the salted cod over night and change the water at least twice. You can use fresh cod and skip tue soaking but add a bit of salt. But salted cod is much better."

INGREDIENTS
2 pounds salted cod fish
5 large potatoes, peeled and sliced
3 large onions, sliced
3/4 cup olive oil
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon paprika
3 tablespoons tomato sauce

DIRECTIONS
Soak salted cod in cold water overnight or for a few hours. Drain water, repeat. Heat a large pot of water until boiling. Cook cod for 5 minutes; drain and cool, leaving cod in large pieces. Set aside.
Preheat oven to 375 degrees F (190 degrees C).
In an 8x11 casserole dish, layer half the potato slices, all of the cod, and all of the onions. Top with remaining potato slices. In a small bowl, mix together olive oil, garlic, parsley, pepper flakes, paprika, and tomato sauce. Pour evenly over casserole.
Bake in preheated oven for 45 minutes, or until potatoes are tender.


Cod fried cakes:

Cover with fresh water in a saucepan, bring to a boil and simmer for 20 minutes or until cod is soft. While the cod is simmering, cook the potatoes in their skins, then peel and mash with butter and milk. When the cod is ready, drain it thoroughly and remove the skin and bones. Shred the cod with a couple of forks. Add the creamed potatoes, parsley, mint, pepper and egg yolks, salt and the port. Mix thoroughly. Whisk the egg whites until stiff, then fold into the cod mixture. Take a lump of the mixture, about the size of a small egg, and mold it in your hand to make a torpedo shape. Deep fry in 375 degree oil until crisp and brown all over. Drain on paper towel and serve hot.
