Well I have a feeling home trip it is not going to be all about the food, he is just going to love seeing you, the family & being home so you could probably have chili dogs and he'd be happy, What I mean is do the pork that you know you can do, he will love it because you made it! Make it easy and stress free as possible for yourself so you can enjoy him and spend more time before he leaves again. Not so much fuss and anxiety in the kitchen right now. And I looked at those spices I think pork or chicken work better than beef in that recipe..As for rice, I'd go with plain but the coconut is sticking out to me for some reason that sounds wonderful. I don't think you will go wrong with any rice you pick though. That sounds like a yummy meal you are cooking there.
