1 tsp. salt
1 c. soy milk
1 (8 oz.) tofu paste / cube and into processor
1 tbsp. chopped chives
1/2 tsp. pepper
1/2 tsp. minced onion
Paprika

Mix together all ingredient in food processor.

ingredients

4 cups cubed boiled potatoes
same ingredient as cheese and chives dip


Cook potatoes with salt until tender, drain. Place potatoes in shallow greased 2 quart casserole. Heat milk and cream cheese, stir until cheese melts. Add chives and next 3 ingredients; pour mixture over potatoes. Bake uncovered at 350 degrees for 30 minutes. Garnish with fresh chives.

i would use salted butter just for more flavor. For a stick of butter I would say use 2T of each herb (maybe a little less garlic as its so strong) then just mix and let it sit for a few hours to blend the flavors and there you go! I make butter with garlic and dill that is great! Good luck!

I found a recipe for battered fries and tried it last night with a few adjustments. Here it is:
Par fry your fried for about 2 minutes and then let them cool.
Wisk together a small can of evaporated milk with about two tsp of chopped chives-maybe more, and about a cup of sour cream. Also have a seperate mixture of flour and 2 tbsp of chives-in a bowl. When the fries have cooled put some into the liquid mixture and then pull them out and put them in the flour mixture to coat them. Then deep fry them again. My company LOVED them. Good Luck

You can use green onions instead of the chives and for the lettuce substitute another green like spinach or chard.

Serves: 6-8 Printer Friendly Version

Ingredients
2 Red Delicious apples, cored and thinly cut julienne
1/4 cup thinly sliced red onion
1/4 cup dairy sour cream
1/4 cup mayonnaise
3 Tbsp chopped parsley
1 oz crumbled blue cheese
1 Tbsp lemon juice
1/4 tsp sugar
Salt and Pepper


Method
Combine all ingredients; mix well. For optimum flavor, refrigerate 6 hours or overnight.

Chive-Flavored Salad Dressing



1/4 cup of fresh chopped chives

1/2 cup of buttermilk
Chive dressing

2/3 cup of mayonnaise

1/1/2 teaspoons of sugar

Freshly ground black pepper to taste

Salt to taste

Wisk all ingredients in a bowl. Cover, and refrigerate for at least one hour to chill. Serve over green salads.


OR

Unless you want dozens of itty bitty bags floating around your freezer, put them all into one bag. BUT squash the pile flat like a pancake (make several pancakes if you have enough chives). The pancakes can then be transferred to a container, with plastic wrap between layers. This way you can easily snap off the amount you need, without having to attack a mountain with a jackhammer. Alternatively, if you are going to add chives to something like a stew, freeze them in water in an ice-cube tray. No need to thaw. Just plop in an ice-cube or two.

Air dry the chives. To air dry chives, pick the stalks, tie them with twine and hang them inverted in a cool, dark place, such as a garage or basement. Allow to remain about two or three weeks or until crisp. Crumble and store in air-tight jars. Store the herbs up to six months.
