When substituting, you have to make sure you use the right amount. Sometimes the substitute is smaller or bigger/melts faster or slower/i.e. This means you must be able to tell what changed amount goes into the recipe.

Palm sugar has many close substitutes. You can use maple sugar, brown sugar, date sugar, jaggery, pilloncillo, or a mixture of 1 cup dark sugar and 2 teaspoons of molasses. Pilloncillo is a Mexican sugar block that comes cone shaped; jaggery is a tan, unrefined sugar made in India. Jaggery also comes from the palm tree.

Candle nut can be substituted by many things. The closest substitute is Macadamia nut. You can also use Brazil nut (use less since they are 3 times the size of candle nut), raw cashews (two cashews per candle nut in the recipe), or blanched almonds (two almonds per candle nut in the recipe).
