Cook the broccoli, cut in flowerettes, in salted boiling water, just a few minutes...do not over cook. Meanwhile make a white sauce with butter, flour, salt & Pepper and milk, add shredded cheddar cheese and set aside. Mix well drained broccoli and cheese sauce in a buttered casserole dish, heat through in oven or microwave and serve. Buttered crumbs are nice on top.Alvin Said:

If you have a recipe that uses chicken broth of course you can substitute vegetable broth. Try adding some tamari to enhance the depth of flavor. Say 1 Tablespoon for every 1 cup of broth.Jennie Said:

I make mine like this all the time. I think you'd like it (even tho it's cheese free)...**Spicy Broccoli with Garlic**
1 1/2 pounds broccoli
4 1/2 tablespoons olive oil
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon crushed red pepper
1 1/2 teaspoons vinegar
Directions
Peel and slice thick stems from broccoli; separate florets.
In a skillet, bring water to a simmer over medium-low heat. Add stems and florets; cook, covered, until bright green, 4 minutes.
Stir in olive oil, minced garlic, salt, and crushed red pepper. Cook 4 minutes.
Turn off heat; stir in vinegar.

Basically a cauliflower cheese but with brocolli......Cook the brocolli by plunging into boiling water and bringing back to boil for few minutes.
While its cookin make up a white sauce with 25g flour, 25g butter and 1/2 pt milk in a pan over medium heat, stirring all the time until it thickens. Turn off the heat and add a little grated cheese.
Drain brcolli,put in ovenproof dish, pour over sauce, sprinkle with a little more grated cheese and some breadcrumbs then bake hot oven for about 15 minutes or until golden brown........

Try it with Kraft Shells and Cheese. Add a little steamed brocolli and some cubed chicken breast. Just follow the recipe on the box and when its done....add the steamed broccoli and cooked chicken cubes. Ground beef works well too. How did you get your kids to eat broccoli? You could be Mommy of the year!
