1 tbsp. olive oil
14 oz. can stew tomatoes
1 lb. broad beans , cut on angle
1/4 c. whipping cream ( heavy )
Rub garlic over chicken . Sprinkle with basil , pepper flakes , S&P . In skillet brown chicken in oil . Stir in tomatoes and beans . Cover and simmer 5 min. Uncover and cook over med. , 8 - 10 min. or until liquid is slightly thickened and chicken is tender . Stir in cream and heat through .
Stuffed Acorn Squash
1/4 c. slivered almonds
1 tbsp. butter
8 oz. pkg. cream cheese
3/4 c. milk
1 lb. broad green beans , cut on angle and cooked
1/2 c. water chestnuts , sliced
1 1/2 tsp. lemon juice
1/2 tsp. dry mustard
1/4 tsp. ginger
salt
2 acorn squash , halved length wise , baked
Saute' almonds in butter in saucepan until lightly browned . Add cheese and milk ; stir over low heat until cheese is melted . Stir in ingredients except squash ; heat thoroughly , stirring occasionally . Spoon vegetable mixture into hot baked squash .
To bake squash , cut in half length wise and scoop out seeds . Place in baking dish , cut side down . Add water 1/2 " up the sides . Bake at 375 degrees F. , 45 - 55 min. or until tender .

You could. I would take the tough outer casings off the broad beans (fiddly but worth it) to make the dish even better. Cook the beans separately then stir them through the cooked pasta.Sandra Said:

However, you can also mash them in various stages from crunchy fresh to tender, depending on the texture you desire.So, steam until they are cooked long enough for you, or boil in water (just enough to cover the beans). Some recipes call for adding salt to the water, but that again is up to you. When the beans are ready, a simple way to serve is tossed with olive oil, black pepper, minced herbs, and crushed garlic. Once again, the amounts and ingredients are based on your tastes.
If the beans are older, blanch, shell and then cook as desired.

i would take ALL the veggies, cut them in equal size chunks, par-boil them for 2 minutes tops, then transfer them to an oven dish, make a simple bechamel & cheese sauce, pour over the veggies, pop in the oven. Voila, a nice veggie cheese bakeThen you can just grill the sausages, and serve with whichever type of potatoes you prefer (i'd do mash with this dish)
cheese sauce recipe (although you can buy a packet):
- melt 30gr butter in a pan on a low heat, with a little garlic if wanted
- add 30gr plain flower
- stir well, let the flower sweat for a minute (don't let it go all dry)
- add milk & bring to a slow boil (the quantity depends on how much sauce you want, but for this recipe you want the sauce to be quite thick)
- add pepper & salt.
- once you're happy there's enough milk in there & all the lumps from the flower have dissolved, add cheese. You can use cheddar, mozarella, blue cheese....
- if needed, add some more milk. Remember, you want this really thick.
