Blueberry SnowIngredients:
1 package Unflavored gelatin (1 env)
1/4 cup Cold water
1/2 cup Boiling water
2 cups Fresh blueberries (rinsed)
1 teaspoon Lemon juice
2 tablespoons Granulated sugar replacement
2 Egg whites (beaten stiff)
6 Fresh strawberries(optional)
Directions:
Sprinkle gelatin over cold water in mixing bowl; set aside 10 minutes to soften. Add boiling water and stir to completely dissolve. (If gelatin does not dissolve completely, heat slightly.) Set aside. Combine blueberries, lemon juice and sugar replacement in mixing bowl or food processor and whip into a puree. Stir completely into gelatin mixture. When blueberry mixture is cool, thick and syrupy, beat until frothy. Fold stiffly beaten egg whites into blueverry mixture. Spoon into 6 serving dishes; refrigerate until set. Before serving, top with fresh strawberries. 1 serving = 1/3 fruit calories = 18

Combine the blueberries, frozen yoghurt and milk in a blender or food processor. Blend until smooth, adding more milk if necessary. Serves 1.

Makes about 1 lb (500 g) of Biscotti
- Preheat oven to 350 F (180 C)
- Nonstick baking sheets - Food processor
4 cups all-purpose flour 1 L
1/4 tsp baking powder 1 mL
1/4 tsp baking soda 1 mL
1 cup chopped peeled banana 250 mL
1/2 cup blueberries, thawed if frozen 125 mL
2 tbsp each canola oil and water 25 mL
1 large egg 1
1 tsp vanilla 5 mL
1. In a large bowl, combine flour, baking powder and baking soda. In a food processor, combine banana, blueberries, oil, water, egg and vanilla. Puree until smooth. Pour over dry ingredients and mix well.
2. In the bowl and using hands, knead until dough holds together. Transfer to lightly floured surface. Divide dough into 2 equal pieces. Shape each piece into a log. Flatten the logs to make about 4 inches (10 cm) wide.
3. With a fork, poke holes all over the surface of the logs. Place about 4 inches (10 cm) apart on baking sheet.
4. Bake in preheated oven for 35 to 40 minutes or until firm. Place pan on a rack and let cool for 30 minutes. Reduce oven temperature to 300 F (150 C).
5. With a sharp knife, cut each log into 1/4-inch/0.5 cm thick slices. Place, cut side down, about 1/2 inch (1 cm) apart on baking sheets. Bake for 30 minutes longer or until hard. Transfer cookies to a rack and let cool completely. Store in a tightly sealed container for up to 30 days.

Microwave Dog Biscuit Treats
2 cups whole wheat flour
1/2 cup beef broth or chicken broth
1 egg
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/2 teaspoon garlic powder
Mix dry ingredients together.
Add egg and enough broth to moisten.
Roll dough into a ball (floured surface).
Roll dough out to desired thickness (thinner for smaller dogs) and cut with cookie cutter.
Place in a single layer on a microwave-safe baking dish.
Cook on HIGH in microwave for 10 minutes or until firm.
Let biscuits cool and harden.
Store in an airtight container.

Blueberry Pancakes:Blueberries burst with sweet, tart flavor when cooked briefly. After you've been blueberry picking (or just picking up blueberries from the store), hit the kitchen to make these taste-of-summer pancakes. Serve with maple syrup or Blueberry Syrup.

Preparation
1. Whisk together the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk together the eggs, cottage cheese, milk, lemon zest and vanilla. Make a well in the dry ingredients; add wet ingredients and stir until just combined.
2. Once the batter is smooth fold in the blueberries.
3. Heat a large nonstick skillet over medium heat or an electric pancake griddle to 375 degrees F (190 degrees C). Moisten a crumpled paper towel with vegetable oil and use it to lightly oil the skillet or griddle. Spoon on about 1/4 cup batter for each pancake and cook until bottoms are golden and small bubbles start to form on top, 3 to 4 minutes. Flip and cook until the other side is browned, 1 to 2 minutes longer. Lightly oil pan between batches. (Adjust heat as necessary for even browning.) Serve hot.

1 1/2 cups fresh or frozen unsweetened blueberries, slightly thawed
1/2 cup Equal® Spoonful*
1 1/2 teaspoons cornstarch
4 teaspoons cold water
Pastry for single crust 9-inch pie
2 teaspoons 2% milk
Place blueberries in medium saucepan. Sprinkle berries with Equal®, cornstarch and water; toss to coat. Cook over medium heat, stirring constantly, until berries begin to release juice and form small amount of thickened sauce. Remove from heat and cool.
Roll pastry on floured surface to 1/8-inch thickness; cut into eight 5-inch squares. Reroll scrapes as needed. Place scant 2 tablespoons blueberry mixture in center of each pastry square. Fold square in half to form triangle. Press edges together to seal; crimp edges with tines of a fork. Brush pastry surface lightly with milk.
Bake on baking sheet in preheated 400°F oven 18 to 20 minutes or until golden brown. Serve warm or at room temperature.
Makes 8 servings.
You can use regular sugar instead of equal if you like.
