INGREDIENTS
1 cup butter or margarine, divided
1 cup sugar
1 cup water
1 1/2 cups self-rising flour*
1/3 cup milk, room temperature
2 cups fresh or frozen blackberries
1/2 teaspoon ground cinnamon
2 tablespoons sugar

DIRECTIONS
In a 10-in. round or oval baking dish, melt 1/2 cup butter; set aside. In a saucepan, heat sugar and water until sugar melts; set aside. Place flour in a mixing bowl; cut in remaining butter until fine crumbs form. Add milk, stirring with a fork until dough leaves sides of bowl. Turn out onto a floured surface; knead three or four times. Roll out to an 11-in. x 9-in. rectangle 1/4 in. thick. Spread berries over dough; sprinkle with cinnamon. Roll up, jelly-roll style. Cut into 1/4-in. thick slices. Carefully lay slices in baking dish over butter. Pour sugar syrup around slices (syrup will be absorbed). Bake at 350 degrees F for 45 minutes. Sprinkle sugar over top and bake 15 minutes more. Serve warm or cold. (*If self-rising flour is not available, use 1-1/2 cups all-purpose flour plus 1/4 teaspoon salt and 2-1/4 teaspoons baking powder.)

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.
In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining 1 cup sugar, lemon juice, and blackberries. Transfer to a cast iron skillet, and bring to a boil, stirring frequently. Drop dough into the skillet by spoonfuls. Place skillet on the foil lined baking sheet.
Bake 25 minutes in the preheated oven, until dough is golden brown.

3 Cups all purpose flour

2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 Cup butter
Pinch of cinnamon, nutmeg
1 Cup buttermilk
1 Cup fresh blackberries
Preheat oven to 400 degrees. Combine all dry ingredients in a large bowl. Cut in butter. Add berries. Knead to form 3 - 4 inch balls. Place on lightly greased cookie sheet and flatten slightly. Bake 15 - 20 minutes. Remove to rakes to cool. Best served warm. (Makes about 1 - 1 1/2 dozen)

Ingredients
3/4 cup sugar
3 tablespoons cornstarch
1 1/2 cups water

1 (3 ounce) package blackberry Jell-O
1-1 1/2 pint blackberry (fresh or frozen)
1 pie shell, baked, cooled

Directions
1. Mix sugar and cornstarch in saucepan.
2. Add 1 1/2 cups water.
3. Cook until clear; remove from heat. Add 1 package blackberry Jell-O.
4. Stir to dissolve. Cool slightly and add 1 pint or more of the blackberries.
5. Fold into Jell-O mixture carefully.
6. Pour into chilled crust. Store in refrigerator.
7. Keeps well.
8. Serve with whipped cream or ice cream.
9. Use 1 tablespoon less of Jell-O when using fresh berries.

This will take a little while to prepare, but it will be so worth it. In a sauce pan add 1 c. both sugar and water and about 2 cups of berries. Let this simmer until the sugar is totally disolved, most of the berries should have burst at this point.

Now, I don't do this all the time, but if I am serving this for brunch and guests I will strain the berry sugar mixture through a fine sieve or cheese cloth. I don't do this for just the family though and nobody complains. I actually prefer the texture.

Once the mixture has cooled put it in a freezer bag and let it freeze until solid. Once this is done take the bag out and break it up slightly. You don't want it to be mush, just chunks that are about 2" sq. Add this to your blender with no fat vanilla yogurt. Believe me it actually is better with this. Full fat tends to be really heavy. Generally it's about 1/2 of a large container of yogurt. Start with 1/3 of the container and add as much yogurt as you like. If I have it, I will add a little lemon or orange zest to the mixture. If I am serving at a bruch I will generally put the yogurt in the freezer and let it get almost frozen. It just let's the smoothie stay cool a little longer while I serve.

Don't tell the husband or kid, but I actually add a fibersure to it as well ; ) They still haven't figured out.

Another simple, yet delicious classic, this time a heavenly autumnal dessert

Servings: 6
Level of difficulty: Easy
Preparation Time: 10 minutes
Cooking Time: 35 minutes

You will need: Saucepan

Ingredients
4 large cooking apples, peeled, cored and cut into big chunks
1 tbsp water
3 tbsp Sugar
225g blackberries, can be frozen

For the crumble:
170g plain flour
75g butter
75g demerara sugar





Method
Preheat the oven to 180C/gas 4.
Put the apple chunks, water and sugar into a saucepan over a lowish heat and cook until the apples are soft and mushy; this should take about 10 minutes. While cooking, stir it every minute or so to prevent sticking. Taste and add more sugar if it needs it.
Transfer the apple pulp into individual bowls or one big pie dish and allow to cool slightly. Stir the blackberries into the apples.
To make the crumble, rub the butter into the flour until it resembles very coarse breadcrumbs. However, if you rub it too much the crumble will not be crunchy. Combine with the sugar. Sprinkle the crumble mixture over the slightly cooled apple and bake for 15 mins for small crumbles or 30-45 mins for larger crumbles. Serve warm with whipped cream or vanilla ice cream.
Cook Notes
If you choose to leave out the blackberries, add ½ tsp ground cinnamon or a few cloves to the apple. You can also add oats to the crumble, or nuts, such as chopped pecans, walnuts or nibbed almonds. If you want to use less sugar, you can cook eating apples instead of the cooking variety, although they have a slightly less fluffy texture.
For a summer time Rhubarb and Strawberry Crumble, just cook the rhubarb as you would for the Rhubarb Fool With Strawberries, though you shouldnt reduce it as much; it should be a bit more juicy. Add the sliced strawberries - but not the cream - and cover with the crumble.

For the Pie Crust:
1 1/4 cups flour
1 teaspoon salt
4 ounces cold unsalted butter
1/4 cup ice water

For the filling:
4 cups fresh blackberries
1/2 cup sugar
1/4 cup flour
2 teaspoons lemon juice
1 tablespoon fresh minced ginger

For the crumble:
1 cup flour
3/4 cup toasted slivered almonds
1/4 cup firmly packed brown sugar
1 teaspoon ground cardamom
4 ounces melted butter

Preheat the oven to 350 degrees. For the Pie crust: In a food processor, combine the flour, salt and butter and pulse until the mixture resembles coarse crumbs. Add the water and pulse just until the dough begins to come together. Do not overprocess. Turn the dough onto a floured board and shape into a flat disc. Wrap in plastic wrap and refrigerate for 30 minutes. Roll out the dough to a 10-inch circle that is 1/8-inch thick. Place in a 9-inch pie dish and blind bake for 10 minutes. Remove from the oven and cool completely. For the filling: In a large bowl, gently mix together the blackberries, sugar, flour, lemon juice and ginger. Pour the mixture into the cooled pie shell. For the Crumble: In a bowl, mix together the flour, almonds, sugar and cardamom. Mix in the melted butter. Top the pie with the crumble and place in the oven and bake for 30 minutes, or until the crumb topping is golden brown. Remove from the oven and cool completely.
