Spinach and black bean lasagna. This is also good if you are vegetarian as there is no meat added (though it could be). I would add 2 chopped green peppers to the tomato sauce, personally, but this recipe is the one I use.

I would make two pans, just to be sure you'd have enough, but it's not very difficult or expensive.

This is a great recipe and it's easy!!!!

1 lb Black Beans
8 cups of water
1 1/2 cups Sofrito(see below)
Salt and freshly ground pepper to taste

Rinse beans. In a large saucepan combine beans and water. Bring to a boil. Than lower the heat and simmer for 1 hour or until beans are tender.
Add sofrito and simmer for another 15 minutes Add salt and pepper Drain and serve.

Sofrito
3 tablespoons olive oil
2 green bell peppers seeded deveined and cut into 1/2 inch dice
1 red bell pepper seeded deveined 1/2 inch dice
1 1/2 onions cut 1/2 inch dice
2 tomatoes coursly chopped
2 tspns dried oregano
1 tspn ground cumin
2 tablespoons minced garlic
1/2 bunch chopped parsely(stemmed and minced)
1/4 cup vinegar
1/2 driy white wine

Ina very large heavy 12 inch skillet over high heat heat the olive oil and saute the peppers and onions for 3to 4 minutes. Reduce the heat to low and add the remaining ingredients and simmer for 4 to 5 minutes or until the veggies are tender.

This is a great recipe and it will keep in the fridge for up to 3 weeks!!! Good Luck and Bon appetite!!

Mexican black bean soup

1 pound dried black beans
2 bacon slices, chopped
1 cup chopped onion
3/4 cup chopped carrot (optional)
3/4 cup chopped celery (optional)
2 garlic cloves, minced
1 jalapeño pepper, seeded and minced
4 (14-ounce) cans fat-free, less-sodium chicken broth
1 (28-ounce) can crushed tomatoes, undrained
1/3 cup minced fresh cilantro
2 tablespoons fresh lime juice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup reduced-fat sour cream


Sort and wash beans; place in a large bowl. Cover with water to 2 inches above beans; cover and let stand 8 hours or overnight. Drain and rinse beans.
Cook bacon in a large Dutch oven (I like the Microwave better) over medium-high heat until crisp. Remove bacon from pan, reserving drippings in pan. Add onion, carrot, and celery to drippings in pan; sauté 10 minutes or until tender. Add garlic and jalapeño; sauté 2 minutes. Add beans, bacon, broth, and tomatoes; bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours or until beans are tender. Place 4 cups soup in a blender or food processor; let stand 5 minutes. Process until smooth; return pureed soup to pan. Stir in cilantro, lime juice, salt, and pepper. Serve with sour cream.

Yield
12 servings (serving size: 1 cup soup and 1 tablespoon sour cream)

Anyone have any simple, quick recipes for black bean and chicken tacos?

Do you have taco seasoning? If not, make a mix of cumin, chili seasoning, garlic powder or salt, salt and pepper and that will be a good substitute. If you don't have those either, than just grill up the chicken and heat up the beans throw em in the tortilla and pour some salsa over them. If you don't have that - haha then just season with salt and pepper and call it good!

Not sure you can make the tortillas on your own.

I would check their website and see if they have any ingredient descriptions to help you out more with the veggies.

BLACK AND WHITE BEAN SALAD

2 c. cooked black beans
2 c. cooked white beans (navy or soldier)
2 (7 oz.) jars roast peppers, cut in 1/2" slices
1/2 c. sliced scallions
1/2 tsp. minced garlic
1/3 c. + 2 tsp. white vinegar
1 tsp. paprika
3/4 tsp. chili powder
4 tbsp. oil
1 tsp. salt
Fresh ground pepper

Blend all ingredients except beans in a blender or food processor until smooth. Put 1/2 sauce on each kind of bean. Marinate separately for at least 2 hours. Arrange on plate using black and white beans to form a contrasting design. Pour any excess sauce over top.


OR


WHITE AND BLACK BEANS WITH EQUAL

1 cup finely chopped red onions
2 cloves garlic, minced
2 tablespoons olive oil or vegetable oil
1/3 cup red wine vinegar
1/4 cup chopped red pepper
1/4 cup chopped green pepper
2 tablespoons minced parsley
2 tablespoons Equal® Spoonful*
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (15 ounces) great northern beans, rinsed, drained
1 can (15 ounces) black beans, rinsed, drained
Red and green pepper rings

Saute onions and garlic in oil until crisp tender in medium skillet; remove from heat and cool until warm.
Stir vinegar, peppers, parsley, Equal®, salt and pepper into onions.

Pour onion mixture over combined beans in a bowl; mix well.

Garnish with pepper rings.

* May substitute 3 packets Equal® sweetener.
