if ur using rice cooker. be sure its working properly.
if not make sure heat it distributed evenly whether ur using a gas stove (fire) or electric stove.
and make sure the rice is evenly placed inside the pot. no small mountains or hills. it has to be flat.
2. WRONG WATER PROPORTIONS
generally, the proportion is 1 =1. I cup rice, 1 cup water.
if its hard and starchy, that means its not yet cooked u must add more water.
rice varieties consume different amounts of water. even the same rice variety may have varying water needs per brand. good quality rice normally needs half a cup more (eg. 1c rice = 1 1/2 c water or 2 c rice = 3 c water).
(Note: Cooking time for rice can be tricky. Thus this may not be the basis as it differs per variety and cooking method.)
try to experiment and eventually u will see how much water you need to put in the kind of rice that you have to achieve the texture that you like.

Basmati rice has a very nice fragrance and taste. I don't know how to describe the difference, but if you've ever eaten food at an Indian restaurant, they probably served basmati. Using plain white rice won't ruin your recipe, but it will taste a little different than intended.Troy Said:

this is not particular to basmati, but to all rice. the reason you get sticky rice is you let it cook too long, the starch cooks off, makes the water thick and the rice gets sticky. pay attention to your rice when you cook it, and test it every couple of minutes. the grain should be al dente like pasta, then it's ready, rinse, drain it and let it sit, so that the water and starch run off and when it dries, it'll be nice and fluffy.Sylvia Said:

My recipe probably is nowhere near authentic Indian, but it tastes great and that's all that counts!In about 1.5 Tbsp olive oil, saute some minced garlic and minced ginger until fragrant. Add 1 cup (I don't wash mine) of basmati and stir until well-coated and a bit translucent. Then add 1 Tbsp of curry powder, stir well until a bit fragrant. Then add 2 cups chicken broth, stir well, bring to boiling then put a lid on it, bring to a simmer and time for 20 minutes. At the 10 minute mark, stir in some frozen peas and some baby shrimp. When it's done, stir in some chopped green onions and chopped cilantro.
Really tasty, low in fat, and generally good for you.
