You can freeze bamboo only if you dump it into freezing water and then proceed to ice the water. You can't (From my experience) actually turn the bamboo into an ice form.

Seaweed can be frozen by leaving it in the freezer.

Tofu can be frozen but will become brittle.

I'm guessing that what you have is Lucky Bamboo, which is, strangely enough, not a bamboo at all. It is a resilient member of the lily family that grows in the dark, tropical rainforests of Southeast Asia and Africa. Lucky Bamboo has long been associated with the Eastern practice of Feng Shui - or the bringing of natural elements of water, fire, earth, wood and metal into balance within the environment.

What you need to do is to change its water every week, and keep touching its roots to see they do not get slimy. Lucky Bamboo prefers plenty of indirect sunlight and room temperatures at 65-70o.

There are a few I use on a regular basis when cooking Oriental type dishes....
Ginger Sauce
1/4 cup Onion -- chopped
1 Small Ginger root or 1/8 teaspoon ground ginger
1/2 cup Soy sauce
1/4 cup Rice wine vinegar

Just whirl it all together in a blender until smooth.

Citrus Sauce
2 1/2 cups fresh orange juice
3 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
3/4 cup soy sauce
1 tablespoon balsamic vinegar
1 tablespoon sesame oil
1/3 cup chopped peeled fresh ginger root or 1/8 tsp ground ginger

Combine it all in a small pan and simmer for 15 minutes. You'll need to pass it through a strainer if you use fresh ginger to get the chopped pieces out.

Coconut Sauce
(this is a Khmer recipe, and its very good)
2 Cups fresh coconut milk or 1 large canned coconut milk
½ Tablespoon sugar
1 Tablespoon cornstarch
¼ Teaspoon salt

Put all ingredients into a small pan and simmer until sauce thickens

Bamboo has almost no taste of its own. In S.E. Asian cooking it is used as a "filler", an ingredient to give a dish structure.
Bamboo and tofu are ideal fillers, because they absorb the taste of the dish they are added to.
My favorite bamboo dish is Vietnamese Bun Mang Vit soup, a duck soup with noodles and bamboo.

Unlike trees, all bamboos grow to full height and girth in a single growing season of 3–4 months. During this first year the young shoots strike skyward supported by photosynthesis from the rest of the clump with no time to sprout their own branches and leaves. Over the next year the pulpy wall of each culm slowly dries and hardens, sprouting branches and leaves during the second year from juvenile sheathes that form from each node. Over the following year the culm hardens still further shedding its juvenile sheaths and commencing its life as a fully mature culm. Over the next 2–5 years depending on species, fungus and mould begin to form on the outside of the culm, eventually penetrating and overcoming the culm so that by around 5 – 8 years depending on species and climate the culms begin to collapse and decay. This brief life means culms are ready for harvest and suitable for use in construction from 3 - 7 years.
