Then get the one that's right for your recipe.Also, be sure to taste it before you add any sugar. Most canned azuki (Japanese type) already contains enough sugar.

When you get dried beans, there are three steps.1. Wash them in a bowl of water and pick out any little bits of gravel or broken beans.
2. Soak the beans in water for at least 8 hours.
3. Boil them or cook in soup for about 2 hours.
Older beans can take longer to cook. It's definitely fine to soak them for longer than 8 hours (like, put them in before bed and cook them for dinner the next day), but if you cook them too long they can get mushy.
