There are LOADS of things you can do with avocado. Yum. Here are just some.
You get some endives and peel some leaves off without breaking them. You chop up some avocado and some tomatoes finely and maybe a shallot if you like the taste of raw onion. You mix with a little soya sauce and a squeeze of lemon juice and spoon the mixture into the endive leaf "boats".
You can then just scoop them up and eat them. Ideal as a starter.

Cut the avocado in half and scoop out the flesh, being careful not to break the skin.
You put it in a bowl, add a squeeze of lemon juice, some raz al hanout (a mix of spices you can find in arab shops), some salt to taste and blend.
Add some chopped tomato and fresh coriander and put the mixture back into the skins. Decorate with some tortilla chips or serve with warm pitta bread.

Do an avocado, mango and feta cheese salad. The perfect combination of tastes!
You can do a raspberry vinegrette to top it off.

Another great recipe if you can find fresh figs is.
A slice of large beef tomato, topped with a slice of fresh fig ,a slice of buffalo mozarrella and a chunk of avocado topped off with a basil leaf.
Just drizzle with olive oil and sprinkle some chunky salt over the top.
They make really pretty little towers for a starter or accompaniment and the combination of tastes and textures is just sublime!

Avocado Cheesecake



Degree of difficulty: Medium

You need:
Biscuit Pastry
4oz Butter
6-8oz SR Flour
4oz Sugar
1 Egg
1 Level tbls Custard Powder

Filling
1 Ripe Avocado
1 Tin Condensed Milk
1 Gelatine Tablet dissolved in 1/4 cup Warmed Lemon Juice
375g Chream Cheese

Method:
Biscuit Pastry
Cream butter, sugar, eggs and custard powder. Add flour gradually until stiff dough is formed. Blind Bake at 180 degrees.

Filling
Mix all ingredients together well. Pour into cooked pastry shell. Top with whipped cream and set in fridge.

I've heard they are very high in nutritional value.
I love them . I often just eat them by themselves with my meals.
The link below has more recipes for them than I knew existed.
For something really simple try them with cottage cheese, tomato,cilantro and salt and pepper to taste.
